Each day when we search through Facebook, we see a half dozen recipes shared by friends that look amazing. Some of them are more complicated than others, but one that recently stood out to me was making eggs in a muffin pan. As someone who spends entirely too much money on breakfast each week, this was a remarkably easy way for me to prepare a full week worth of breakfast in 25 minutes. I tried the recipe I found online and it was good, but it was lacking something. This was my first attempt…

Here is a simple, but delicious recipe for Vegetable Omelettes in Muffin Pan.

Servings: 12 miniature omelettes

Ingredients:

Instructions:

1. Pre-heat oven to 350 degrees.

2. In small saute pan, add 1 Tbsp. olive oil and cook onions and peppers for 5-7 minutes, stirring occasionally.

3. While onions and peppers are cooking, beat eggs and milk. Add salt and pepper to taste.

4. Spray muffin pan with non-stick spray. Use a ladle to add egg to muffin pan. Don’t fill to the top as eggs will expand while baking.

5. Add spinach, peppers, and onion to each slot on muffin pan. I add a touch of salt, pepper, and Men Cook Too Caribbean Jerk Seasoning to each slot.

6. Bake for 15 minutes on middle rack of oven.

Now you can enjoy this dish as breakfast, lunch, or dinner. Eat on its own or enjoy with cheese in the bagel of your choice. Refrigerate the leftovers and microwave for each meal.

Update for Men Cook Too Kickstarter Backers

We are getting closer to the completion of the layout process of Men Cook Too. I’d say we are about two weeks away from the final proof being completed and there will likely be another week on top of that for edits. Once edits are made, it’ll be another week and then the book will be published. As soon as the book is published, it should be less than another week to get the first-run stock of books and I will send out rewards for all the pledges made through Kickstarter. I have been working on the thank you notes and have been slowly piecing together all the rewards for my backers. Those who are set to receive e-book copies will have to wait probably around another week to get their files for them to be transferred into the proper format.

Spinach, Feta and Quinoa Cakes Recipe

Servings: 8 Cakes
Ingredients:
2 cups Water
1 cup Uncooked Quinoa
1 cup Spinach, chopped
1/3 cup Olives, diced
1/3 cup Feta Cheese
2 Eggs
1/2 cup Bread Crumbs
1/4 tsp Salt
1/4 tsp Pepper
2 tsp dried Parsley

Instructions:
In medium-sized sauce pan, add water and quinoa. Bring water to a boil. Reduce heat to low, cover and cook for 15 minutes. The quinoa should absorb most of the water in that time. While quinoa is cooking, mix spinach, feta cheese, olives, eggs and bread crumbs in large bowl. When quinoa is finished cooking, add to bowl and mix together with other ingredients. Add salt, pepper and parsley roll mixture into patties. I make them about the size of a hamburger, but you can adjust them to be smaller or larger depending on what you’re craving.

In a large frying pan, add oil and set heat to medium. Place patties on pan and cook for eight minutes or until brown. Flip and cook for additional eight minutes. Serve with a side spinach salad with olives and feta cheese, with a glass of red wine.
